Catherine Campbell is an assistant professor of community food systems in the Family, Youth and Community Sciences Department. Campbell’s fascination with the intersection of food systems, community health and public policy led her to the Mid-Florida Research and Education Center, where she aims to understand urban food production in Florida. Campbell’s research interest is human motivation and behavior, and focuses on understanding the relationship between how individuals and communities interact with food, from purchasing to regulating and all aspects between. Campbell’s previous work experience includes three distinct research positions with the University of Florida: research associate in food systems and community health at Program for Resource Efficient Communities, postdoctoral associate in the UF/IFAS Extension Family Nutrition Program, and state food systems curriculum developer in the Department of Horticultural Sciences.
